I am even lucky enough to have a room with a sea view,” she confides with a smile. Originally from Marseille, Clara travels the roads of France with her own show, Le Cabaret de Clara Morgane, and occasionally performs as a special guest, as she is here at the Cabaret de Licques.

“It is demanding, but I am fortunate to do what I love,” she tells us with her infectious energy.

Behind this frantic pace of life lie the secrets of a carefully cultivated balance. “I have a lot of energy because I am careful about how I organize myself. I divide my year in two: six months for creativity, where I write and compose, and the other six months, I am on tour. That is how I stay inspired.”

With touching humility, Clara also mentions the slight adrenaline rush that precedes every performance. “There is always that thrill before going on stage, especially when I am presenting new pieces.” And despite her years of experience, this thrill has never left her, proof of the undiminished passion that drives her at every performance.

For several years, Guillaume Coquerel has been training a young chef, Clément Renaud, who was initially an automotive mechanic before retraining in cuisine. Drawing on his experience gained with Michelin-starred chefs such as Marc Veyrat, notably at Auberge de l’Eridan in Annecy and Ferme de Mon Père in Megève, Guillaume transmits his expertise to Clément, who has now been working with the company for 15 years. What are the fundamental principles of your cuisine and which ingredients do you prioritize?

At the Cabaret, our approach goes beyond the simple show experience. What we aim for is a harmonious fusion between the art of the stage and that of cuisine. Fresh products are at the heart of the Cabaret’s cuisine, with particular attention paid to local produce. Dishes can present ingredients either in their raw form or in a more subtle way through deconstruction techniques. The objective is always to highlight local and fresh ingredients.

What is your approach to showcasing local products in your culinary creations?

We rely on a subtle balance between traditional techniques and contemporary innovations. We enjoy working with products in all their forms to enhance them. To add a unique visual and gustatory touch to our dishes, we transform them, for example, into foams, or fruit or vegetable gels. This approach embodies our desire to revisit and modernize classics, a philosophy that guides each of our creations.

- Can you tell us about an emblematic dish of Cabaret de Licques and its conception?

The emblematic dish of the Cabaret is undoubtedly Licques poultry, a local product benefiting from the Label Rouge certification. First, this poultry is cooked at a low temperature (63 degrees for one hour) to preserve its tenderness, then it is seared in a pan to achieve a crispy, golden exterior. This cooking method highlights the quality of the product without altering its natural flavor. Furthermore, we are considering new culinary perspectives to include it on the menu in other forms. TF: Coming from a family of circus artists, performance has run through my veins for five generations. Juggling came as naturally to me as playing football does to other children. My joining Folies Gruss, made possible through my marriage to the daughter of Alexis Gruss, was a decisive step, giving me fifteen years of enriching experiences. However, the desire to take on new challenges pushed me to step out of my comfort zone. Meeting Guillaume and the opportunity to join the Cabaret de Licques appealed to me with the promise of a different, stimulating adventure. The immediate connection with Guillaume and the team strengthened my decision to become part of this exceptional troupe. Between Folies Gruss and the Cabaret de Licques, what similarities and differences do you observe, both in artistic creation and in the audience experience? TF: The performing arts are the vibrant heart of both, and that is what drives me deeply. The staging is a notable difference: the circus ring offers 360° interaction, whereas the cabaret takes a more front-facing approach. This new stage perspective at the Cabaret de Licques drew me in for its greater proximity to the audience, even though the audience is less visible than in a circus. What sets the Cabaret de Licques apart from other performance venues? TF: The distinction lies primarily in the atmosphere created by the people who bring the venue to life. Guillaume’s philosophy is to value and respect every team member, which fosters a palpable sense of camaraderie and harmony within our team. This positive dynamic is felt by the audience, who reflect that energy back to us, creating a unique and memorable experience. How has your time with Folies Gruss influenced your work at the Cabaret de Licques? TF: The influence is not limited to Folies Gruss; every experience enriches my journey. TF: This collaboration opens up a new stage space and a different clientele, both conducive to experimentation. The trust Guillaume places in me is crucial; it encourages me to test new ideas with complete freedom, which is extremely valuable for my artistic development. What would you like the audience to take away from their experiences at the Cabaret de Licques, and in particular from your performances? TF: What I want most is to share joie de vivre, happiness, and laughter. Making people laugh is the essence of my artistic pleasure and the key to memorable performances.

Ultimately, she established herself definitively in front of nearly 5 million viewers with her appearance on the show “Magicien: leurs plus grands secrets” on M6.
